June Student Spotlight: Grace Atchison

Grace Atchison, MAND Student Board Member and University of Minnesota President of the Student Organization for Nutrition and Dietetics (2022-23)
Tell us about yourself:I am a fourth-year nutrition student at the University of Minnesota-Twin Cities. I am in the 4+1 Integrated Master’s program, so will complete my master’s here as well! I hope to become a pediatric dietitian with the ultimate goal of working in the NICU. I am originally from Kansas City, Missouri, but moved to Minnesota for college. When I’m not in class or working, you can find me dancing with my tap group, trying out a new coffee shop, or going to a Minnesota United game.

Through my nutrition-related work experiences and participation in a mentorship program where I was paired with two registered dietitians, I have learned that there are more opportunities in the field of nutrition and dietetics than I ever imagined. These experiences have shaped my specific interests and plans for the future, but have also given me a more well-rounded view of the field. Further, they have provided me with a number of skills not taught in nutrition coursework and have solidified my decision to become a dietitian in the future.

Why were you excited to join the MAND Student Board? I was excited to join the MAND Student Board because it is a great opportunity to get more involved with MAND and help spread my love of nutrition to other students throughout Minnesota! MAND provides so many opportunities for students to learn about the profession, so I cannot wait to immerse myself more in the organization.
