Provide us with a brief description of your job: I am the Nutrition Coordinator at Fridley Public Schools. My main roles include menu planning for breakfast/lunch/snack for preschool through 12th grade, working with our special diet students, running our social media, recipe creation, planning our Fresh Fruit and Vegetable Program, meeting with K12 vendors, and assisting staff in their daily needs.
What do you love about what you do? I love working with our students and exposing them to new foods and flavors! I also love the creativity aspect of the job that lets me think outside the box and try new things.
What are the challenges? Planning ahead and knowing what food trends students will enjoy, keeping up with all the USDA waivers during COVID-19, explaining the reasoning for USDA meal planning guidelines to students or parents, and staffing challenges.
How has your MAND membership benefited you? Continuing education opportunities and networking with other Dietitians.
What do you think is the future of nutrition and dietetics? I think that Dietitians as a whole are going to continue to expand into more unique pathways outside of the traditional hospital, clinic, or community setting.
What are your favorite activities/hobbies? Traveling, spending time at the lake, baking, golfing, and trying new restaurants!
